The beneficial properties of olive oil The extra virgin olive oil is a rich source of vitamins A, D, E, K and especially E, which protect our body against some cancers (e.g. cancers of colon and breast) and osteoporosis, as well. Due to the antioxidant action, there is a delay at the aging of cells, it helps in digestion and absorption of calcium and improves skin health. The extra virgin olive oil also contains linoleic acid, which lack from the human body causes a series of failures, as growth retardation, metabolic disorders, etc. Scientific studies done on the effect of olive oil on health have shown that daily consumption of it resulted in lower occurrence of cardiovascular diseases, reduction of total cholesterol in the blood. Due to its content in polyphenols may also reduce hypertension. HARVEST-CRUSH Olive harvest begins early in December and ends about at the end of January. The fruit fall in nets lay on the ground with the help of special machines. Leaves are removed from the nets and the olives are collected and transported to the press every day (It is very important for the quality of the olive oil to be ground daily.) The olive oil press is modern and operates under European Union rules. The treatment is applied at low temperature. The oil is collected and stored in stainless steel tanks where it remains nearly 3 months. This causes all impurities to go to the bottom of the tank. Hence the olive oil remains clean and ready for bottling, with this method of settling, and filtration is avoided, during which the olive oil may lose some nutrients. In this way we ensure the guaranteed quality of olive oil. OLIVE TREE KORONEIKI VARIETY It produces olive oil of exceptional quality and unique organoleptic characteristics (fruity, spicy) , that make the Koroneiki known as a unique variety. This variety is adapted to extremely harsh conditions, dry and warm. It can be grown in the coastal areas up to 500 meters. The extra virgin olive oil of Koroneiki variety is fairly ranked as the first olive oil worldwide. AWARDS The extra virgin olive oil of Sitia has traveled all over the world and has fascinated everyone! In 1998, the competition held by the National Olive Oil Council of Spain and in 1999 during the 5th Exhibition SOL in Italy the Extra Virgin Olive Oil SITIA won the first prize. The European Union according to the regulation 1065/97 acknowledged the special characteristics of the olive oil of Sitia District and established it as Protected Designation of Origin (PDO).

We are the Tsimitakis’ family, who we ourselves cultivate and produce the EXTRA VIRGIN OLIVE OIL out of our own olive groves, located in the easternmost part of Crete, Palekastro village.
