There are several hiking trails with the European paths E4 & E1, but also outside of them where all come to one of the most beautiful beaches.
The gorge has a few narrow points and a rope that helps you down a small obstacle. Once down the bottom you can walk along the pebble beach back into Paleochora.
My wife and I walked to the taverna and it took about nearly 2 hours I think and the walked back down the same road 1hr 10mins (timed that) . One can also walk up to the top of the mountain which overlooks Pale and it gives good views of the surrounding area.
There is another walk along the opposite coastline but didn't do that one, so can't help
Yes there are boat trips but Alabastron or another DE will help you I'm sure.
